What To Do With Thanksgiving Leftovers?

We’re going on three days of Thanksgiving leftovers in my house, which means my kids will balk if I tell them leftovers again. What to do?

 

Well, it’s time to get creative! First up, pea fritters. We had peas that we had blanched and frozen from a few months ago that we got at William L. Brown market. They were a delicious side dish for Thanksgiving, and I’m not about to waste them! Making them into fritters is actually quite easy.

 

Leftover Pea Fritters

Now, I did not have 2 cups of peas but this receipe is based on that. Like any good, Southern cook, I recommend going with your gut with it comes to the amount of ingredients. You know you’ve got it right when you can make them into a patty that doesn’t fall apart.

2 cups of peas

1 tablespoon of olive oil

1/4 diced onion

1 minced garlic clove

1 1/2 cup flour

pinch of salt

pinch of seasoning (I love Mama Honey’s Butt Rub)

1/4 Colby Jack shredded cheese (or more to taste)

 

Mash all together. Make into pattys. Fry in skillet, preferably an iron skillet. Serve! Easy!

 

Sadly, I didn’t get photos. Everyone ate them too fast 🙁

 

 

In years past, I’ve also been a fan of taking crescent rolls and baking leftover turkey, dressing, and cranberry into them. This year, I’m baking them into biscuits!

 

I used my recipe for drop biscuits (you can go here to see that) and then put out a slightly flattened biscuit on a cookie sheet, then layered turkey, cranberry sauce, and dressing on it. THEN put more biscuit on top. Baked at 350 for about 15 minutes… may take longer or shorter depending on the size of the biscuit.

 

It emerged juicy and hot and yummy! Not pretty, but yummy.
